Technical characteristics
The vineyards are exposed to the meridian sea breeze, as well as to the low temperature.
Humid winds deriving from the surrounding mountains during the nightfall. All the above have a key role which comfort the plants over the warm summer months.
30 acres planted with vines of at least 60 years. The vines are prophylloxires.
The grapes come from different regions of the island and are local, undiscovered varieties.
Soil Shallow: Sandy loam soil on slate subsoil

Yields: 300 kg/acre
Density of Plantation: 250 to 300 vines/acre

Harvest: August 25th to September 25th
Imminent pressing of whole grapes. Alcoholic fermentation in low temperature. Aging on the lees for at least 3 months.
