Assyrtiko is distinguished by its crystal-clear yellow color and intense primary aromas of stone fruits and citrus. With a strong mineral background, it stimulates the palate. It is characterized by high acidity, while the low yields provide a full, rich body and a long finish.

Vinification
The grapes remain with their skins in the press at a controlled temperature for 4 hours. Fermentation occurs at low temperatures in stainless steel tanks. The wine stays with fine lees for about 3–5 months, during which time some stirring ( batonnage) takes place.
